Val's Pressure Cooker Greens

Collard greens, turnips greens... whichever, they're delicious. No debate. But it takes so long to make that most times we don't bother until it's an occasion like Thanksgiving. Well not anymore! You can have perfectly delicious greens in 1 hour solid. Grab your electric pressure cooker and come with me!

Ingredients
  • 2 lbs greens (collard of turnip)
  • 2 lbs smoked turkey (neck, wings of leg)
  • 2 cups water
  • 1 whole onion, diced
  • 2 tsp Tony's creole seasoning
  • 3 tsp adobo seasoning
  • 1 tbsp garlic, minced
  • 1 tbsp apple cider vinegar
Preparation
  • Place smoked turkey pieces into the pressure cooker and pour in water to make your stock
  • Close and lock the lid, close the pressure escape valve
  • Set pressure cooker for 20 minutes on the meat/poultry setting
  • Once the pressure cooker stops, open the pressure release valve and let it vent completely
  • Open, then add the greens and all remaining ingredients

  • Close and lock lid and once again close the pressure release valve

  • Set for 40 minutes on the meat/poultry setting
  • Once done, be sure to vent the pressure cooker completely before opening
  • Open and stir well
  • At this point do a taste test and adjust seasoning (if necessary)
Serve with cornbread and maybe some fried chicken 😉  Enjoy!!
